When Singapore received its independence in 1965 the largest part of its population was comprised of individuals from Chinese, Malay and Indian heritage. And while there are similarities between these background cuisines, new dishes were formed featuring elements of each cultural and created a unique Singaporean flavor.
Some of the main features of the traditional cuisine include the robust flavor and common spices. Singaporean food has a lot of flavor and much of it is based on the particular choice of spices that are used and are typical to Indian food. Also, Chinese condiments and Malaysian herbs contribute to the overall flavor and uniqueness of Singaporean food. Some of the popular herbs and spices used are lemongrass, coconut, chilies. Many of the dishes are pretty spicy and can be surprising to Western tourists who frequently discover a new favorite food while visiting Singapore. In addition, many of the traditional food based restaurants will feature a variety of vegetarian options .
